Sarah's Savory Beef & Tomatoes

Yield: 2-4 servings, depending on size
Ingredients:
- 1 can French onion soup, undiluted
- 1 can tomato soup, undiluted
- 4 oz canned mushrooms, sliced, drained
- 14.5 oz can diced tomatoes, do not drain
- 1 clove garlic, minced
- 1 lb beef stew meat, trimmed and cubed
- pepper, to taste
- egg noodles or rice
Cooking Directions:
- In a dutch oven, heavy casserole dish, or crock pot, combine the cans of French onion and tomato soup, mushrooms, tomatoes and garlic. Mix well.
- Lightly season the beef with pepper. Add to the casserole and mix well.
- Bake in the oven, uncovered, at 350 degrees for 3 to 4 hours, OR cook on high in the crockpot for 3 to 4 hours until the meat is tender and sauce has thickened.
- If the sauce becomes too thick, add a little water or beef broth.
- Serve over cooked egg noodles or rice, by following the directions on the package.
